Fun Facts About Vanilla

Vanilla’s story begins in Mexico, where Indigenous communities treasured it long before it found its way into kitchens around the world. The vanilla vine is an orchid, and its fragrant pods became one of Mexico’s most sought-after gifts to the world. Hand-pollination techniques developed in the 1800s helped its cultivation spread to places such as Madagascar and Indonesia.

A fleeting flower, a lasting treasure: each vanilla orchid flower opens for only about a day. If successfully pollinated, it can develop into the pod we call a vanilla bean. Vanilla is especially unusual among orchids for the culinary and commercial importance of its fruit.

Much like grapes grown for wine, vanilla beans develop different flavours and aromas depending on where they grow and how they are cured. There is far more to this familiar ingredient than the word “plain” suggests!

Vanilla has long found a place in food, drink and fragrant traditions, including use as a good-luck charm. In folklore, it also carries associations with love and sensuality. Today, its heavenly aroma in baked goods feels familiar and comforting—a little reminder of warm kitchens and something lovely in the oven.
